Vinification and aging: his Riserva is the result of a careful selection of Sangiovese grapes selected in a single vineyards. The vinification is carried out in cement tanks and during the natural fermentation the temperature of the must is continuously checked for 4 weeks.
The malolactic fermentation takes also place in cement vats, later the wine matures for 24 months in medium capacity barrels.
The wine is refined in a cement vat for one year with a further 6 months in the bottle.
