Vinification and aging process: vineyard density is 9,000 plants per hectare in order to create competition and to ensure a production of 400/500 grams of grapes per vine without further green harvest. Vinification is traditional starting with alcoholic fermentation, that takes place in 500 litre oak barrels utilized as small vats for 20/25 days.
The wine is directly racked into new oak barriques where malolactic fermentation takes place on the lees that are continuously moved through batonnage. It matures in the same barriques for 18/20 months and it is finished in the bottle for 12 months minimum.
Average production/year: 4,000 bottles
